Staff Profiles

David Robinson

Originally from Brisbane, David has travelled and lived extensively in various parts of Australia. David owned a vineyard in Rowland flat, Barossa Valley, South Australia. At this point he thought of establishing and running his own Steak House.

Toro’s is the experience I have always wanted to have. At my age I’m supposed to be retiring, but the restaurant has always been an unfulfilled goal that I always wanted to achieve.  Who knew that you could work 96 hours a week and really enjoy it?

Dave has had 35 years in Sales. He is the communicator and drive behind the sales in the business. He is passionate about his business, people and life in general. Just seeing David in action is an experience all to itself. People love coming to the restaurant because of David.

Averil Lawrie

Originally from the United Kingdom, Averil immigrated to Australia in the 70’s. Averil has been to Spain a number of times, and like David has also lived in various parts of Australia and has travelled to a number of different countries throughout Europe and Asia.

Averil is enjoying the challenges of running her own business. With her 25 years experience in accounts and administration, Av ensures the cogs are turning and keeps the business going.

I love being behind the scenes and keeping everything neat and tidy. The boys get carried away sometimes and it’s my job to keep them in line … and I love that!

Stewart Lawrie

Born and bred in Adelaide South Australia, Stewart came to Launceston in 1996 and has since tried to become a ‘local’. Stewart always wanted to have his own business and it was a natural progression from running different hospitality organisations and working in a number of different tourism establishments.

I have always been in the hospitality and tourism industries and I love the connection I get to make with people. I enjoy trying to match what the business can offer with what people want in a restaurant. When you love what you do, it doesn’t seem like work: it’s a place where your friends can come around and have some of the things you have to offer. That is what I think all of us want for our restaurant: for all our customers to feel as though they are one of our friends coming for a visit.

Stewart has travelled through Europe (spending some time in Spain), Asia and also lived and travelled through various parts of Australia.

Rachael Gow

Stewart’s wife Rachael is the Chef behind most of the dishes on the menu. She has had extensive training and worked in a number of different restaurants and hotels in her time. Rachael has won a number of awards for her cooking and is delighted she now has the ability to put her skills to the ultimate test.

I love the family environment. Everyone works well with each other and we have the same vision. It’s not always beer and skittles, but overall it’s the best thing we have ever done.
